Mediterranean Stuffed Chicken
Chicken breast
100g Feta
8 Sun dried tomato in oil
3 cloves of garlic
Basil
Zest of a lemon
You will have plenty of mixture left for salad toppers over next few days.
Method
-Crumble the feta into a bowl and add finely chopped sun dried tomatoes, garlic and basil
-Grate the zest of a lemon in and mix together
-With a sharp knife, cut the middle of the chicken breast so you can open it like a book
-Pack in the filling and press down the breast
-In a hot pan, melt some oil and pan fry the breast for about 60/90 seconds each side until it's golden brown and sealed-Put in a pre heated oven on 160c for 25/30 minutes (make sure the chicken is cooked through
Rest the Chicken on these crushed potatoes and put in the oven. I literally just swapped the rack of lamb for the chicken and kept the recipe the same.

This Ice Cream is amazing for a hot day.
Ingredients
3 Ripe Bananas
1 tsp Vanilla Extract
Dash of Honey
2 tsp of cocoa powder
You could also add a little bit of peanut butter if you wanted too
A little skimmed milk
Method
Peel, chop and put the Bananas into a food bag. Put in freezer until frozen.
Put the frozen bananas into a food processor or blender. Blend adding a little milk until it's a smooth consistency.
Right at the end, add the rest of the ingredients and blend until it's like soft scoop ice cream. Put in the freezer for around 20/30 minutes to set a little more and serve.
