Healthy Family Friendly Pizza Bites

This is one of my favourite healthy recipes because not only are these pizza bites good hot, they are really tasty for lunch the next day cold from the fridge.

Right, It's Sweet Pot Pizza Time!! Calories wise, these work out around 500 for the serving with around 25g of protein. For a lighter bite, split into two portions and serve with a nice side salad and tub the others up for lunch the next day as these are tasty cold. It's also 0 syns on SW and low WW points if that's your jam. Healthy Family Friendly Pizza Bites Serves 1 INGREDIENTS


150g of Sweet Potato, Sliced into circles

4 tbsp of Tomato Puree

2 cloves of Garlic - Finely Chopped

1 tsp of Oregano

30g of Low fat cheese

1 Small Red Onion, thinly sliced

3 slices of Ham

2 tsp of Olive Oil or to save calories, low cal spray


METHOD


1 - Cut Sweet potato into as many 1.5cm (ish) slices

2 - Brush both sides with a little oil or low cal spray and place on grease proof paper.

3 - Put in a pre heated 200c oven for around 10-15 minutes until top started to brown.

4 - Whilst the bites are in the oven, mix the tomato puree, a little warm water, garlic and oregano in a bowl.

5 - Take out of the oven, flip them and start to make your pizza.

6 - Start with the sauce and then any toppings you like. For this recipe, we have used Ham and Red Onion. Add a handful of cheese to each bite.

7 - Place back in the oven for about 10-15 minutes again until cheese starts to brown.

8 - Serve and enjoy.
