Ingredients
300g of Salmon Fillets (2 average fillets)
20g lighter salted butter
2 cloves garlic finely chopped
1/2 lemon, juiced
1 teaspoon oregano
Salt and pepper to taste
Other half of lemon cut into wedges
Finely chopped parsley
400g of New Potatoes
Preparation
Pre heat oven to 200c
On a baking tray, get enough foil to cover and wrap the salmon.
Place the salmon in the foil and put the butter on top.
In a small bowl, put the lemon juice, salt and pepper, oregano, garlic and parsley in and mix. Pour onto salmon.
Cover the salmon and put it into the oven.
Boil Potatoes and cook the Salmon for around 15 minutes and serve with a side salad
