Ingredients
400g of Cod fillets
2 tbsp Olive Oil
2 tbsp of Lemon Juice
1 tsp of chilli flakes
1 tsp of Cumin
Salt and Pepper to taste
125g of Mexican rice per serving (The ready made uncle bens one is good)
2 tbsp of salsa per burrito
1 tbsp of low fat soured cream per burrito
1 large Wholemeal wrap per person A Handful of salad per wrap
Preparation
Mix the oil, lemon juice, chilli, cumin, salt and pepper in a bowl. This will only create a little bit of marinade so you need to toss the cod fillets into the mix and make sure it’s fully coated.
In a frying pan, Put a pan on medium heat with a little low cal spray and cook the cod for around 4/5 minutes until fully cooked and a nice colour.
This is where you could make your own salsa and Mexican rice but for ease, use 125g of pre made Mexican rice per person as well as 2 tbsp of pre made salsa too. Put them into a centre of a wrap, add 200g of cod per burrito, a handful of salad and then a tbsp of soured cream then fold into a burrito. Place back into the pan and brown the sides.
