I say healthy (ish) because we have swapped out sugar for some sugar free flavdrops, they are low in calories and a really good way to get some more fruit into your diet.
These can be made vegan by swapping out the milk for almond or soya milk.

I used the Toffee Flavdrops from Myprotein but if you haven't got some of that, you could use something like sugar free Vanilla flavouring which you can pick up from most supermarkets.

Healthy (ish) Chocolate Pancakes - Serves 2 These work out at around 350/400 Calories per serving depending on how much fruit you have with them.
Ingredients
130g Flour
250ml Semi Skimmed Milk or Soya Milk
10 (ish) drops of Flavdrops of your choice. I used Toffee.
1 Tablespoon of Baking Powder
1 Teaspoon of Vanilla Extract
A few Vegan Chocolate Chips Per Pancake. I used Additions Dark Choc Chips.
Fruit of your choice.
Method - Mix the flour, milk, flavdrops, baking powder and vanilla extract in a bowl and let stand for 10 minutes. - In a medium heat pan with a little low calorie spray, put some of the mix in a pan, sprinkle some chocolate chips and turn once the bottom of the pancake is cooked. - Flip and cook for another minute or so until both sides cooked. Add a few more sprays of oil and repeat. - These should make around 6/8 pancakes which would be 2 servings. - Serve with loads of chopped up fresh fruit and maybe even a little low calorie ice for an extra little guilt free pancake treat. 4 Ingredient Pancakes - Serves 1 Ingredients
2 Eggs
1 Large Banana
1 tsp of Cinnamon
0.5 tsp of Baking Soda
Method
- In a bowl, use a folk to mash up the Banana.
- Add in the eggs, cinnamon and baking soda and mix/whisk well until all combined and lumps gone.
- In a medium/hot none stick pan, add some batter and cook for 3/4 minutes and then turn. Keep going until mixture is gone and serve with fruit and yoghurt.
