Ingredients
tbsp of Olive Oil
1 large onion, diced
3 cloves garlic, crushed
1 tsp garam masala
1.5 tsp of curry powder
3 tbsp tomato puree
500ml chicken stock
600g of Chicken Breast, cut into chunks
150g red lentils
1 orange pepper, cut into chunks
300g Potato, peeled and cut into roughly chopped
tbsp of Coriander
Preparation
Heat the oil in a pan on a medium heat and fry the the Chicken and Onion for 2 minutes adding a little colour.
Stir in the garlic, spices and tomato purée for another minute.
Add into the slow cooker and pour in the stock, lentils, pepper and potato.
Mix everything together and season.
Cover with a lid and cook for 4 on medium for 4 hours stirring occasionally.
Add cornflour slurry to thicken or a little more stock to thin to taste.
