Slow Cooker Chicken and Lentil Curry | 500 Calories | 48g Protein

Ingredients

  • tbsp of Olive Oil

  • 1 large onion, diced

  • 3 cloves garlic, crushed

  • 1 tsp garam masala

  • 1.5 tsp of curry powder

  • 3 tbsp tomato puree

  • 500ml chicken stock

  • 600g of Chicken Breast, cut into chunks

  • 150g red lentils

  • 1 orange pepper, cut into chunks

  • 300g Potato, peeled and cut into roughly chopped

  • tbsp of Coriander

Preparation

  • Heat the oil in a pan on a medium heat and fry the the Chicken and Onion for 2 minutes adding a little colour.

  • Stir in the garlic, spices and tomato purée for another minute.

  • Add into the slow cooker and pour in the stock, lentils, pepper and potato.

  • Mix everything together and season.

  • Cover with a lid and cook for 4 on medium for 4 hours stirring occasionally.

  • Add cornflour slurry to thicken or a little more stock to thin to taste.
