Ingredients
150g of Chicken breast
50g Feta
20g Sun dried tomatos
2 cloves of garlic
Handful of Basil
Zest of a lemon
tsp Olive Oil
Preparation
- Crumble the feta into a bowl and add finely chopped sun dried tomatoes, garlic and basil
- Grate the zest of a lemon in and mix together
- With a sharp knife, cut the middle of the chicken breast so you can open it like a book
- Pack in the filling and press down the breast
- In a hot pan, add the oil and pan fry the breast for about 60/90 seconds each side until it's golden brown and sealed
- Put in a pre heated oven on 160c for 25 minutes (make sure the chicken is cooked through
