Ingredients
300g of Chicken Breast
1 Red Pepper, sliced
1 Green Pepper, sliced
1 Onion , sliced
30g low fat cheese
2 tsp Smoked Paprika
1 tsp of Cumin
1 tsp of Chilli Powder
1 tsb of Garlic Powder
Tsp Olive Oil
Preparation
- In a pan, on a medium heat with some oil, gently fry the onions and peppers. After a minute or so, add a tsp of the paprika, cumin, chilli and garlic powder and cook.
- Once the mixture is browned, set aside
- Cut a Chicken down the side so it's deep enough to add the filling
- Sprinkle with the other tsp of paprika and some salt and pepper
- Add the cheese and then the veg mix into the chicken
- On a medium heat and a little oil, gently fry off the chicken breast so each side is browned off nicely. If any filling falls out, stick it back in (you don't want to waste any fajita goodness) if you have any left over filling, put it in the oven to roast with the chicken.
- In a 180 pre heated oven, place the chicken on a baking tray and cook for around 20/25 minutes, making sure the chicken is cooked through
- Serve
