Black Bean Chicken

4 Servings


  • 500g of Chicken Breasts, chopped

  • 1 tbsp rice wine vinegar

  • 1 tbsp light soy sauce

  • 2 tsp of oil

  • 1 tsp cornflour

  • 2 tbsp black beans, rinsed and roughly chopped

  • 2 cloves of garlic, chopped

  • 1 spring onion, finely chopped

  • 1 shallot, chopped

  • 1½ tbsp light soy sauce

  • Tbsp of honey

  • 100ml of Chicken Stock

  • 1sp Marmite (if you can stomach the fact it's in the dish)


Cut the Chicken into slices.

- Put the slices in a bowl and mix them well with the rice wine vinegar, soy sauce and cornflour.

- Leave to marinade for an hour.

- Heat a pan until hot, add a tsp of oil and add the chicken mix.

- Fry for a few minutes until nearly cooked and transfer to bowl.

- Wipe pan clean and add the other tsp of oil, beans, garlic, shallot and spring onions and stir fry for a few minutes.

- Add the rest of the ingredients for a few minutes and then the whole mix.

- Cook for another 5 minutes and then serve
