Quick Greek Salad

1 small red onion, thinly sliced

2 large ripe tomatoes, chopped

½ cucumber, chopped

150g of Feta. cut into cubes

Small handful fresh mint leaves

tbsp of olive oil

Drizzle of fresh lemon juice 8 Small Olives

Season with Salt and Pepper


300g chicken breast


Put everything into a bowl and mix. Drizzle over the oil and lemon juice. Optional - Season your chicken and either grill until cooked and lightly charred or cover in foil and put in the over for 20 minutes until cooked.

Calories per serving- 350 or add 150g of grilled chicken for 530 calories and a good protein boost
