Ingredients
400g of sweet potatoes
2x tsp olive oil
50ml crème fraiche
15g spring onion, sliced
60g grated low fat cheese
Preparation
1.Preheat the oven to gas 7, 220c/200c fan. Prick the potatoes all over with a fork. Rub with 2 tsp oil, season with salt and pepper and put on a baking tray. Bake for 40 mins or until tender.
2.Halve the potatoes lengthways and set aside to cool for 5 mins, Scoop out the flesh into a bowl.
Mash then add the crème fraiche, garlic, spring onion and season with pepper. Return the skins to the tray and fill them with the mixture, adding the top with grated cheese. Bake them for another 10 minutes.
