Turkey Pizza

  • 2 turkey breasts, butterflied

  • 1 red pepper, finely sliced

  • 1 onion, finely sliced

  • 30g low fat cheese, grated

  • 2 tablespoons of tomato puree

  • 50g spinach (optional)

  • tbsp of oil

  • Salt and black pepper to taste


- Heat oil in pan and cook onion and pepper until softened

- Place turkey onto tin foil on a baking tray

- Spread tomato puree over turkey

- Add onions and peppers then fold edges of foil together to form a tin foil parcel

- Cook in the oven on 200C or gas mark 6 for 15 minutes

- Remove from the oven, uncover and add spinach and cheese.

- Return to oven for about 6 minutes until cheese is thoroughly melted
