Ingredients
400g of 7% Turkey Mince
30g Chorizo, diced
4 hollowed out Red Peppers - Around 500g worth
Tin of Black beans, drained
60g of grated Mozzarella
1 Red Onion, finely chopped
100g Baby Spinach, finely chopped
x1 tsp Olive Oil
x2 tsp Smoked Paprika
x1 tsp Oregano
0.5 tsp Chilli Flakes
Salt and Pepper to taste
1 tbsp garlic puree
1 tbsp tomato puree
Chicken Stock cube, broken up
Preparation
Basically the same filling as the Burritos but in Stuffed Pepper form.
- Pre Heat Oven to 160.
-Heat 1 tsp of Olive Oil in a pan on medium heat. Add in the Onion for a few minutes before adding the mince and breaking up in the pan.
- After a few more minutes, add in the chorizo and stir for another 4/5 minutes until the oil from the Chorizo starts to come out.
- Add in all of the herbs and spices, garlic, the tomato puree and stock cube and stir.
- I like it without much sauce but add a little water if you want at this point but keep stirring until mixture is starting to brown.
- Turn down heat and add in the Black Beans and Spinach, stir until wilted and beans cooked through.
Cut the Pepper down the middle and hollow out. Add the mixture to the peppers until completely full. Put them on a baking dish and oven cook them for 10 minutes. Take them out and add the 60g of Cheese between all of the Peppers. Put back in the oven for another 10 Minutes until the cheese has browned. 2 Stuffed Peppers per portion.
