Ingredients
10 Large eggs, beaten
6 Chicken Sausages - I used Tesco's version
1 large red onion, thinly sliced
Handful of Spinach
x2 tsp Olive Oil
A Sprinkle of dried Sage
Salt and pepper to taste
Preparation
- Preheat oven to 180C, gas mark 4
- With 1 tsp of oil, add in the thinly sliced sausages into a medium pan and cook. After a few minutes, add the onion and continue cooking for around 10 minutes over a medium heat, stirring regularly. Add the Spinach in for a minute until wilted.
- When sausages are cooked, add the pan to a baking dish. Add the beaten eggs and seasoning and mix until sausages and onions are evenly distributed.
- Bake for 25 to 30 minutes or until your eggs are cooked right through
