Sausage, onion and sage frittata

  • 10 medium eggs, beaten

  • 6 low fat sausages

  • 1 large red onion, thinly sliced

  • Handful of Spinach

  • Tbsp Olive Oil

  • A Sprinkle of dried Sage

  • Salt and pepper to taste


- Preheat oven to 180C, gas mark 4

- Prick sausages and place in oven proof dish. Cook in oven for 15 minutes, turning half way through

- While the sausage is cooking, heat the oil in a frying pan and sweat onions for about 10 minutes over a medium heat, stirring regularly. Add the Spinach in for a minute until wilted

- When sausages are cooked, slice and add to baking dish. Add onions, spinach, eggs and seasoning and mix until sausages and onions are evenly distributed

- Bake for 25 to 30 minutes or until your eggs are cooked right through
