Ingredients
1 x tbsp olive oil
240g Sweet Potatoes, Diced (Skin On)
x1 red onion
150g brussels sprouts, sliced
x6 Bacon Medallions
Salt and pepper
2 x tsp paprika
2 x Large eggs
80g Spinach
Preparation
1.Grate the Sweet Potato.
2.Heat the oil in a medium heat frying pan, add the potato and cook for 10 minutes until they soften. Stir frequently.
3.Add the red onion, sprouts and cook for 5 minutes.
4.Then add the bacon, paprika, salt and pepper and continue to cook over a medium heat stirring often until the potatoes and sprouts are tender. Add in the chopped Spinach until wilted.
5.Once softened make a well in the middle of the mixture,
6.Crack the egg and cook until the white is cooked but the yolk is runny.
