Ingredients
Tbsp of Oil
3 cloves garlic, minced
1 medium onion, chopped
300g Extra Lean Mince
1 Large Carrot, chopped
Tbsp of honey
Black pepper to taste
Chilli Flakes
250g of cauliflower rice (to make, take a head of raw cauliflower chopped into chunks and pulse in food processor until it achieves a rice-like consistency)
Thinly sliced spring onion
Preparation
-Add oil to a pan over medium-high heat
-Add the garlic and onions and gently cook for 4 minutes
-Add the mince and cook for 7 to 8 minutes
-Stir in the carrots and season with honey, chilli, and black pepper
-Add the cauliflower rice and spring onion. and mix until everything is thoroughly combined
-Cook for 5 minutes until cauliflower is soft but not mushy.
-Top with more green onions before serving.
