Baked Cod and New Potatoes

Ingredients

2 cod fillets, around 130g per fillet


2 cloves of garlic, crushed


1 tablespoon of dried basil


1 fresh red chilli, chopped


400g tin of plummed tomatoes


salt and pepper to taste


tsp of olive oil


x2 slices of Lemon


400g of new potatoes, boiled

Preparation

Heat the oil in a large pan over a medium heat and add garlic and chilli and stir gently fry for 3/4 minutes and then add the basil.


Add the tinned tomatoes and season. Simmer on a low heat for 10 minutes.


Break the tomatoes slightly with a wooden spoon


Pour the tomato sauce in a small roasting tin. Season the fillets and place on top of the sauce.


Add the slices of Lemon to the top of the cod and cover dish with foil


Place in a preheated oven at 200C or gas mark 6 for 15 – 20 minutes
