Serves 3/4
Ingredients
500g Lean Turkey mince
One tin of light coconut milk
Thai Curry Paste. Pick the lowest calorie one you can find.
Baby corn
Mange tout
Chilli flakes
Onion, chopped
Fresh basil
Method
-Add meatballs and chopped basil in a bowl and mix. Season with salt and pepper.
-Make into 8 meatballs then fry off on medium/low heat with a little olive oil or low cal spray until cooked through.
-In another frying pan, add paste (to taste) and onion then fry on medium heat for a minute.
-Add coconut milk and other veg and simmer for 5 minutes
-Add meatballs to the pan and simmer for another 15 minutes
-Serve as a soup like meal, with more veg with some rice noodles. Oh and thanks for sharing the picture of the meatballs.
