Tasty Scalloped Potato Roll

Well, where do I start with this one, it's soooooo tasty! As always, make sure you follow Fat Loss Feast Facebook and Instagram page and let me know what you think of the recipe. Serves 2 Calories - Around 600 calories per portion SW Syns - 0 Low in WW points. Ingredients

250g of 5% lean mince 4 medium sized potatoes 80g of low fat cheese 1 medium onion, finely chopped 1 Green Pepper, finely chopped Tin of chopped tomatoes, drained 2 tsp of smoked paprika 1 tsp of garlic granules 1 tsp oregano One bag of spinach 30g of garlic and herb low fat Philadelphia cheese Method Sprinkle around 20g of finely grated cheese over some grease proof paper on a baking tray. Lay thinly sliced scalloped potatoes on each other over the cheese until the tray is covered. Season with salt and pepper and sprinkle a little more cheese on top and put in a pre heated over for 30 minutes on 180. With a little low calorie spray, put a pan on a medium high heat and start browning the onion. After about 4/5 minutes, add the green pepper. After a few more minutes, add the mince and season with salt and pepper. Brown the mince for a further 5 minutes and then add the herbs and spices, stir for a minute and then add the drained chopped tomatoes and cook for another 5 minutes. In another pan, add the spinach, a tiny bit of water as well as some salt and pepper. Wilt it down and take off the heat and transfer to a bowl. Mix in the Philadelphia. When the potatoes are brown after around 25/30 minutes, take out the oven.. Layer half of the potato with the spinach mixture and then the mince mixture. Fold over the other side of the potato. Sprinkle with the rest of your cheese and oven cook until cheese on top has browned off. Told you it was a tasty one!!! . Serve and enjoy

Just made this and it was amaaaaazing! Also made a veggie version for my fussy 13 year old, substituting the mince for courgette and mushroom…..so tasty!
