Fat Loss Feast Lime and Coconut Chicken

Lime and Coconut Chicken - Serves 4


4 Chicken Breasts

2 Teaspoon of ground cumin

3 Teaspoons of curry powder

Pinch of cayenne pepper

Zest and juice of half a lime

2 teaspoons of ground coriander

1 can of light coconut milk

1 small fresh red chilli - chopped

Salt and Pepper to taste


1 - Cut chicken into strips

2 - Mix Coconut milk, spices, zest and juice of lime, chilli into bowl and mix well.

3 - Add chicken and marinade it for 24 hours if possible (it will still be tasty if you don't marinade it)

4 - Add a little oil or light spray in a pan on medium heat.

5 - Add mixture to pan and cook for around 20/25 minutes stirring occasionally. Watch the coconut milk doesn't split if the pan gets too hot.

6 - Once cooked, serve with some rice for a healthy and tasty curry dish.
