Low Calorie Pizza Chicken

Craving Pizza but don't want a HUGE daily calorie boost? This low calorie Pizza Chicken is perfect!! If you swap out the pepperoni for a lighter topping, its syn free and low WW points. Even with the tasty pepperoni on top, it's pretty low calories for how naughty it tastes!! Low Calorie Pizza Chicken Serves 1 - 400 calories depending on Chicken Breast size and weight. Ingredients 1 Medium sized Chicken Breast, cut down the middle 100g of Passata 40g Low Fat Cheese Green Pepper, thinly chopped 1 Mushroom, thinly chopped

Small slice of lean Ham, thinly chopped

A few slices of Pepperoni (swap this for more ham if you want to keep it syn free)

Salt and Pepper 1 tsp of Oregano

0.5 tsp Garlic Granules For the Sweet Potato Wedges 1 Medium Sweet Potato, washed and chopped into wedges with skin on Low Cal Spray of a little oil Salt and Pepper 0.5 tsp Garlic Granules 1 tsp Smoked Paprika

Method Pre heat the oven to 180c. In a bowl, mix the Potatoes, Garlic Granules, Smoked Paprika, Salt and Pepper with some oil or low cal spray, Make sure everything is mixed well and then put on a baking tray and cook for 20/25 minutes until brown. In a bowl, mix the passata, salt, pepper, oregano and garlic granules together. This sauce is for when life is making healthy eating difficult but if you have the time, you can simmer this with some actual chopped garlic and finely chopped onions for way more flavour although I think this is tasty as it is and very quick. Butterfly cut the chicken and then add the sauce into the middle and around 10g of the cheese. Fill the chicken with fillings of your choice but I am using finely chopped green pepper, mushroom and ham. Again, if you had time, you could gently cook down the pepper and mushrooms. Fold the chicken over and put on a oven dish. Add more sauce to the top, the rest of the cheese and toppings of choice. I'm going simple with some Pepperoni. Put in the oven with the sweet potato wedges and cook for 20/25 minutes, until cheese is brown and chicken is cooked through. Serve and enjoy!
