So the recipe...

Bolognese - Makes 6/8 portions so ideal for the bolognese/chilli change up.

  • 1kg of extra lean mince - I used Musclefoods tasty grass fed steak mince.

  • 1 large onion, diced

  • 3 cloves of garlic, diced

  • 200g of grated carrot

  • x2 large bottles of Passata

  • Beef stock cube, crumbled in

  • x6 mushrooms, chopped

  • 2 tsp oregano

  • Handful of fresh parsley

  • Dash of Worcester sauce

  • Salt and Pepper

  • Heat a little oil or low cal spray in a pan on a medium heat.

  • Add the mince and cook for a few minutes

  • Add the diced onion and garlic and fry for a few more minutes.

  • Once the meat is starting to brown, throw in the mushrooms, carrot, beef stock, oregano, salt, pepper and parsley.

  • After a minute, add the Passata and simmer for 15 minutes.

Right so now you have a big batch of bolognese. This is perfect for the whole family or for your dinner then lunches for the next few days.

Now with a bit of magic, we will turn this into a tasty family friendly Chilli.

Chilli Time

  • Left over bolognese - Around 400/500g worth

  • 1 Red pepper, chopped

  • 1 garlic clove, diced

  • 1 tsp of cumin

  • 2 tsp of chilli powder

  • 1 tsp of smoked paprika

  • 2 tbsp of tomato puree

  • 1 tin of kidney beans, drained

  • Heat a little oil or low cal spray in a pan on a medium heat.

  • Add the red pepper and garlic. Fry for a few minutes.

  • Add the puree and spices. Fry for another few minutes.

  • Add the kidney beans and fry once more for a minute or so.

  • Add the left over bolognese and let simmer for 5/10 minutes.

Serve with some rice and a little low fat sour cream.
